Quick and Healthy Kids Lunch – Pizza Muffins!

Healthy pizza? Is it possible? Of course it is! Especially when you choose the ingredients and make it at home with no additives or preservatives included.

Quick, too? Yes! Bake up a batch and freeze them to have on hand, then send in the lunchbox with some fresh fruits and veggies whenever the rest of the class is enjoying their (not-nearly-as-healthy) pizza day.

How do you make them? Here’s a couple of options:

1. Traditional Pizza Muffins

These ones bake up like traditional muffins with the goodies – cheese, veggies, etc. – incorporated into the dough. You can use whole wheat pastry flour or gluten free flour as alternatives, and mix and match veggies and meats to your heart’s content! The ingredients list is a bit longer, but that just means there’s plenty of room for customization and experimentation. 2. Mini Deep-Dish Pizzas

This one’s courtesy of Everyday Food with Sarah Carey. These are cooked in a muffin tin using ready-made pizza dough to line the tin instead of using muffin wrappers. Just drop in the pizza dough and press in all the yummy ingredients. Keeping it healthy means you can put goodies like broccoli and tomatoes on top, your favorite cheese, and quality meats.
